I have never been a really healthy person, but since meeting the chap he has certainly whipped me into shape! I know eat so much better than I used to and I thought I’d share a great recipe the we recently cooked in bulk to box up for our pack lunches!
The lovely team over at Simplyhealth arranged a food delivery to the chaps flat and this is how we cooked up our awesome healthy pasta…
Ingredients:
Fresh Broccoli, Cauliflower, Carrot
Diced Red Onion
Diced Red Pepper
Diced Chicken Breast
Wholewheat Penne
Pasta Sauce
Method:
Cook your pasta, and whilst doing so cook you chicken. We used low ft cooking spray and cooked our chicken in a large frying pan.
Once the pasta has boiled, drain and pop back in the pan with the sauce, keep on a low heat.
Stir the chicken into the pasta and sauce.
Now you have an empty frying pan, fry up the onions and peppers, and stir into the rest.
Whilst frying the onions, boil your Broccoli, Cauliflower, Carrot and then stir into the rest.
Yes, you probably will need two people to keep an eye on all your pots and pans! I had the chap watching the chicken and pasta whilst dicing up the vegetables. We had enough for 4 portions and boxed them up to take to work with us!
I sprinkled some olives over mine to add a little more flavour. We also cooked our chicken in paprika, and added some chili flakes to the pasta sauce as we like a little kick!
