So here I have another super easy recipe for you! This is probably of one my most favourites at the moment and it always tastes even better the next day for lunch so it’s worth making a little more just for that reason!
Ingredients (for 2 meals & a lunch)
2 jacket potatoes
500g of 5% beef mince
1 box of Cirio finely peeled tomatoes
1/4 tube of Cirio tomato puree
1 garlic clove
1 tbsp of coconut oil
1 onion (diced)
1 pepper (diced)
1 sachet of chilli con carne flavouring
1 tbsp of Worcester sauce
Method
Pierce your potatoes, wrap in a sheet of kitchen roll and pop in the microwave for 5 mins, rotate and warm for another 5 mins.
Melt the coconut oil on the heat, add crushed garlic clove, onion and pepper.
Once these have cooked, add in your mince meat. Brown off.
When your meat is browned stir in the box of finely chopped tomatoes and Worcester sauce.
Stir in your sachet of flavouring.
If the sauce is a little too sloppy then add a squirt of the tomato puree to thicken.
Take out your potatoes, split them open, and spread a little butter on them.
Serve into two bowls and your lunch box. Garnish with cheese!
