One Pot Prawn Linguine

Last week I got a little daring and tried a new recipe and a new cooking method in the shape of One Pot Prawn Linguine – I was chuffed with how it turned out so I thought I’d share it with you lovely lot! I’d never cooked pasta in the same pot as the sauce, I would always boil first so this recipe saved time and cleaning!

Ingredients

1 Onion finely chopped
2 crushed cloves of garlic
3 fresh Plum tomatoes, peeled and chopped
3 handfuls of baby spinach
240ml of plain passata
480ml of stock (I used beef)
2 drops of tabasco sauce
200g of large peeled raw prawns
200g of spaghetti
Low-fat spray oil
Salt and black pepper
Parmesan for serving

Method

Spray a deep frying pan over a medium heat with some spray oil, once hot enough add the onions and garlic and cook until golden brown. Add your tomatoes and cook till the just start to go a little on the mushy side! Then add in the stock, passata, tabasco, spinach and spaghetti – don’t worry mine looked aa little like it was swimming at this point too! You then bring to the boil and leave to simmer until sauce reduces. This can take around 6 to 8 minutes, but keep stirring or it will stick to the bottom of your pan.

You then add in the raw shrimp and continue to simmer. Do keep stirring often for around another 6 to 8 mins until pasta and shrimp are cooked. We like our pasta al dente so 6 minutes was enough for us.

Season as needed with salt and black pepper – I used the smallest amount as it was already so flavoursome!

Once plated up you want you can top with some parmesan as I did and a cheeky glass of white wine.

This took me around 20 minutes to make from scratch so it’s really great meal for midweek after work! We’ll be having again very soon
