Chilli Prawn Linguine

We love to cook up some delicious dinners and this has become a firm favourite of ours. It’s quick, easy and tastes so good! It’s based upon a Jamie Oliver recipe but we like to change it up a bit!

Ingredients (for 2)

215 g dried spaghetti
sea salt
freshly ground black pepper
olive oil
2 crushed cloves of garlic
1-2 chopped chillies
200g cooked prawns
1 small glass white wine
2 heaped tablespoons sun-sried tomato puree

Method

Cook your spaghetti in a large pan of salted boiling water according to the packet instructions.

Meanwhile, heat 3 good lugs of olive oil in a large frying pan and toss in the garlic and chilli. As the garlic begins to colour, add the prawns and warm them for a minute.

Add the white wine and the tomato purée and simmer for a couple of minutes.

When the pasta is ready, drain it in a colander, reserving a little of the cooking water. Toss the spaghetti with the sauce,  and serve!

Other Options

As we’ve cooked this a few times now we’ve began adding in a few new ingredients!

Our first new ingredient were scallops! We pan fried these in a separate pan to ensure they were nicely done and then just stirred them into the sauce.

Our second different ingredient were 2 lobster tails! We bought these precooked so we just warmed them through with some butter in the over for 5 minutes and put them in bowl. After chopping up and stirring them in, it was divine!
