When it comes to quick dinners, I think I’ve got a few nailed. I do a mean Chicken Stir Fry, a flavoursome Chilli Con Carne, and we’ve even got steak cooking down to an art. With our busy lives, we like to eat quick but don’t want to miss out on eating good food so I’ve tweaked a few recipes to speed them up and make them perfect for weeknight dinners.
Of course, one of my go to is a spaghetti bolognese so I thought I’d share with you the recipe!
Ingredients (for 2 meals & a lunch)
225g of Spaghetti
500g of 5% beef mince
1 box of Cirio finely peeled tomatoes
1/4 tube of Cirio tomato puree
1 garlic clove
1 tbsp of coconut oil
1 red onion (diced)
1 red pepper (diced)
1 beef gravy stock pot
1 tbsp of Worcester sauce
Chilli flakes to taste
Black pepper to taste
Salt
Method
Boil water for your pasta, sprinkle on some salt and pop your pasta in the hob.
Melt the coconut oil on the heat, add crushed garlic clove, red onion and red pepper.
Once these have cooked, add in your mince meat. Brown off.
When your meat is browned, add in the gravy stock pot and stir thoroughly.
Stir in the box of finely chopped tomatoes, and season with black pepper, Worcester sauce and chilli flakes.
If the sauce is a little too sloppy then add a squirt of the tomato puree to thicken.
Drain your pasta, add to bowl and stir in all the flavours.
Serve into two bowls and your lunch box. Garnish with cheese!
