Bolgonese Ravioli Lasagne; A Recipe

So I am a sucker for meddling with recipes once I’ve tried them by the book for the first time. It’s all about customising them to suit your taste, and here’s what I’ve done with this super quick, yet tasty recipe. Tesco gave me the base as I always check out their 30 Minute Meal sections as I’m a speed cook after work most days, and then I gradually adapt them to suit what we like!

Tesco says this serves 8, but we think it’s far more of a serve 4 portion!

Ingredients

Method

  1. Preheat your grill on high for the best crisped up Mozzarella, and preheat your oven to 180.
  2. Bring a large pan of water to the boil. Add the Ravioli and cook for 3 mins. Drain well.
  3. Heat the pasta sauce in a saucepan over a meium heat for 3-4 mins until piping hot.
  4. Smooth a third of the sauce onto the base of a medium ovenproof dish. Top with an even layer of a third of the ravioli in an even layer, followed by a third of the crème fraîche, a third of the chorizo and a third of the mozzarella. Repeat with the remaining ingredients, but leave off the top layer of Mozzarella.
  5. Pop into the oven for 5 mins to ensure it’s warm all the way through – I found it got a little too cold whilst layering, so adding in an extra step here to ensure peak heat and internal melted cheese.
  6. Layer up your remaining Mozzarrella, and sprinkle in some of the Harissa to give the cheese a litte kick.
  7. Cook under the grill for 3-4 mins until golden.

Super easy, yet mega tasty!

I usually serve mine with a side of vegetables, as I’m a vegetable fiend, but this would work really well with a side salad for the summer months. I can see myself pairing this with some beef tomatoes and red onion with balsamic glaze to pretend I’m on an exotic holiday! The original recipe suggests rocket and balsamic glaze, but I am not a rocket girlie!
